Lyon holds a special place in my heart as it’s where I spent my childhood and it’s where my roots are. What makes Lyon an amazing city is the very large community of successful craftsmen and its location at the crossroads of the South of France, Rhône Valley, the Alps and Burgundy, making it one of the richest regions in France. While in Lyon, I enjoy shopping at Les Halles de Paul Bocuse, a shopping mall by Monsieur Paul that boasts high-end products such as cheeses from La Mère Richard, fresh meat, fish and charcuterie. La Maison des Canuts is a very captivating museum displaying over five centuries of silk production, located in the Croix-Rousse district, historically known as the hub of the silk trade. Le Suprême, a bistro with great, affordable food from Chef Gregory Stawowy is one of my favorites in the city.

New York City is my second home as I have lived there for almost 30 years and now have five restaurants and three épiceries across the city. It’s so diverse and interesting, it never stops inspiring me. La Boîte à Epices is my go-to spice shop by my friend and old DANIEL alum, Lior Sev Sercarz, and Korin is a shop specialized in Japanese “arts de la table” where you can find the highest quality knives for the kitchen. For dining, Gunter Seeger is a pioneer of the farm-to-table movement and his restaurant perfectly demonstrates the authenticity of New York products.

San Sebastián in the Basque region of Spain has the most vibrant food culture I’ve ever experienced. It’s a perfect marriage of creativity and tradition in one of the most stunning settings. I enjoy La Madame, a former brothel turned restaurant and cocktail bar by an American expat chef, Kevin Patricio and Martin Berasategui, which represents Spanish avant-garde cuisine with his innovative restaurant in the stunning Basque Country.

Cayman is the perfect destination for some sun, diving and fine island fun. I go every year for the annual Cayman Cookout with many Chef friends and it’s always a warm and welcoming experience. Stingray City is a series of sandbars that you access by boat, where you can swim with the stingrays. It’s such a fun experience! Blue is my friend Eric Ripert’s fine dining restaurant on the island and as a seafood expert, he sources the best local ingredients for this Caribbean haven.

London has been emerging as a truly captivating food destination in the last couple of years. I opened there almost 10 years ago and enjoy seeing how much it continues to evolve. Portobello Road Market, one of the most famous and my favorite antique market, where you can find all kinds of great collectibles. I always enjoy dining at CORE, Chef Clare Smyth’s elegant yet relaxed restaurant that focuses on the best local produce in London’s charming Notting Hill neighborhood.

Singapore peaks my curiosity every time I go. Ever since opening there in 2010, I’ve been drawn to the diverse community and variety of Asian cultures all in one place, which leads to many different cuisines and flavors. One of my favorite things to do when visiting is explore all the different markets across the city. I also enjoy eating at Odette, a beautiful, artistic space housed in the National Gallery Singapore and offering delicious cuisine inspired by Chef Julien Royer’s grandmother.

Canada is interesting to me because I have two restaurants in different parts of the country, and Canadian food and products are a true combination of climate and culture and really vary by region. From rustic and traditional on the East Coast to Nordic influences on the West Coast, the markets offer some of the best produce in North America. The unique La Cabane à Sucre Au Pied de Cochon is Martin Picard’s contemporary yet traditional sugar shack in the Quebec countryside that is part “cabane” part laboratory. Alo in Toronto is an impressive contemporary French restaurant and cocktail bar by Patrick Kriss, another DANIEL alum who perfectly displays his focus, talent, creativity and ambition.

As a chef, I have an obvious and undeniable passion for eating! Seeking out amazing dishes from around the world not only fuels that passion but also provides creative influence and inspiration that I take home to Le Bernardin in New York City. One of my favorite ways to explore a region is through their street food – La Boqueria in Barcelona, the Hawker Markets in Singapore, and Jamaâ El Fna Plaza in Marrakech all have legendary food that also highlights the culture and community of each area. On the other end of the spectrum, during an incredible stay at the Ritz Carlton in Kyoto, I was reintroduced to the traditional Japanese Kaiseki at Kitcho in the Arashiyama bamboo grove. The experience quickly became a favorite, highlighting my love of outstanding sushi. Ryugin in Tokyo offers a similarly remarkable meal and I’m so thankful to have Masa nearby in New York City to satisfy my cravings.

Although sometimes I try…not every moment of travel can be about food! One of the first things I do to relax when I’m traveling is to visit the hotel spa – especially after a long journey. One of the best I have ever experienced is the spa at Dorado Beach, the Ritz Carlton Reserve in Puerto Rico. Located in a pineapple garden with a lush, jungle-like landscape, it’s truly one of a kind.

During my childhood, I developed a love for nature; I grew up trekking the Pyrenees mountains with my family and friends – hiking, camping and skiing almost every weekend. Now, I always try to sneak in a little outdoor adventure: whether it’s taking advantage of some of the best slopes in Beaver Creek, CO at the Ritz Carlton Bachelor Gulch, hiking the Tiger’s Nest in Bhutan or taking a day trip from San Francisco to explore the gorgeous redwoods in Muir Woods National Monument and ending at nearby Stinson Beach. Less than 90 minutes outside the city, you can be back in the bay area to finish the day with a great meal.

Another hobby that’s developed into a serious travel pastime is listening to music in local clubs. Paris’ famous jazz club Le Caveau de la Huchette in Saint-Germain des Prés, Blue Note in NYC, Chicago’s Kingston Mines, and the Spotted Cat on Frenchman Street in New Orleans are all favorites. I find inspiration in music and see the similarities in the creative process of cooking. Both require an intense craftsmanship that truly speaks to me.

My time in NY is usually spent enjoying great food and going to shows both on and off Broadway. I love dining out at new restaurants or indulging at my favorite Italian spots.

I’ve performed in a number of Broadway theaters, including the Minskoff Theatre, currently home to The Lion King. Going to a show is a must when visiting NYC. Also, going back to food, there are popular restaurants in the Theater District where actors to go to between shows – you can get a glimpse into a Broadway performer’s life, and the food is fantastic!

As a lover of fashion, I love going downtown to SoHo to check out up and coming designers, and going uptown to Madison Ave for the big fashion houses. NYC’s iconic skyline is truly unlike any other. Also, nothing beats walking across Brooklyn Bridge and the Brooklyn Bridge Park is one of my favorite places to have a picnic.

I am passionate about art and try to find time to visit the amazing museums NYC has to offer. Hands down, the Met is my favorite; I always find interesting and inspirational exhibitions and events when I visit.

When I am home in LA I live a very active lifestyle. I just love having easy access to hiking trails and beaches. I have been living on the west side and want to explore my neighborhood more – it’s accessible to me but I haven’t spent as much time as I’d like enjoying being so close to the water.

I’m also really into eating healthy and love exploring local farmer’s markets. Most weeks after my spinning class I head to the Santa Monica Farmer’s Market to stock up.

Here are my best travel recommendations from my adventures around the globe:

If you're planning a trip to Switzerland, no doubt going to Zermatt and seeing the Matterhorn should be on your bucket list. It's iconic and beautiful.

I absolutely love Paris! It is a city I could visit again and again because of its beauty and wide range of things to do as well as the delicious cuisine. One of my favorite things in Paris is the Natural History Museum (Muséum national d'Historie Naturelle) in the Jardin Des Plantes. You'd think a museum would be an obvious tourist trap but it's actually a hidden gem, and the Gallery of Evolution is one of the most beautiful buildings I've ever been in, and boasts an incredible collection of taxidermy.

If your travels take you through Lisbon, make sure to stop at the Time Out Mercado. It's a giant warehouse filled with a variety of food truck style booths so there'll be something delicious for everyone! I also love exploring local eateries to sample authentic foods that really bring culture and traditions alive.

When in San Francisco definitely consider renting a bike and biking to the ferry terminal. Then take a ferry (with your bike) to Sausalito and ride back over the Golden Gate Bridge!

My favorite area of London is Shoreditch. There are tons of trendy restaurants, young people and hipster shops to poke around in!

I took a vacation to Maui in Hawaii two years ago. If you get the chance, go! We rented a car and drove the Road to Hana and I loved it. You pass through a rainforest, by dozens of waterfalls, a black sand beach and see breathtaking ocean views.

On your next trip to Vancouver, BC you need to check out Lynn Canyon. It's a giant temperate rain forest with a massive suspension bridge you walk over to enter and once you're inside you can spend hours hiking, exploring or swimming in the river. It's a great place to take your dog.

Arlington, Virginia. The Cemetery is moving and awesome. This should be part of any trip to the nation’s capital.

Colombia, South America. Bogota has plenty of upscale shopping; Cartagena has beautiful hotels; and be sure to visit the Salt Cathedral of Zipaquirá, an underground Roman Catholic church built within the tunnels of a salt mine.

A big part of traveling is learning about the local cuisine. If you really want to get to know a new location, spend some time in a kitchen! Learning how to make local dishes will give you a sense of what it's like to actually live in that city, like soup dumpling in Shanghai or pasta in Palermo, Sicily.

You open yourself up to learning about new flavors and techniques. A lot times people go to museums to learn about the culture and history of a new place, but you can also learn the history of a place by visiting a brewery or winery! They are such integral parts of their communities, especially the ones that have been around for hundreds of years! Plus, it's a lot more fun to learn about history with a beverage in hand.

Known for its famed Pinot Noir grapes, I always try to find new blends that I have not tasted yet when I explore the different wineries and vineyards in the valley.

Santa Barbara is rich in history and heritage. Known as the queen of the missions, The Santa Barbara Mission is a beautiful historical site to visit with magnificent architecture and views of the Pacific Ocean. Santa Barbara’s history is deeply rooted in the Spanish settlers who came to Santa Barbara in the 1700’s. Today that tradition lives on in our annual Old Spanish Days Fiesta that takes place annually in August. Whenever I visit the mission, I always picnic afterwards on the sprawling mission rose garden lawn. It is a beautiful place to sit and enjoy the beauty of the mission and Santa Barbara.

Known as The American Riviera, Santa Barbara has year round sunshine and golden beaches. I find myself very often at one of the cities many beautiful beaches or Harbor area. Many people do not know this, but Santa Barbara Harbor is world renown for our Sea Urchin, or more commonly known by foodies as Uni. Commercial divers harvest Uni just twenty-two miles off the Santa Barbara coast. The outdoor terrace at local favorite Brophy Brother’s is the perfect location watch the fishing boats unload their daily bounty from the sea.

Growing up in my father’s restaurants, I have always had a passion for the culinary arts. Santa Barbara is an amazing and diverse culinary destination. While I find partial to our resorts offerings, there is so much to explore in the area as well.

With endless sunshine, there is no excuse not to be outdoors in Santa Barbara. There is a plethora of biking and hiking trails to enjoy.
